On Friday I made this very weird sounding, but SUPER easy and really tasty dip/spread. From it’s name, Chunky Cheese Pate, to the ingredients, it is a strange one, but it got eaten right up and was super tasty. It took all of ten minutes to make, which is great for the busy holiday season if you have to bring a little something for a potluck or holiday party. The original recipe from Gourmet, is linked above; below is my adapted version.
8 oz Neufchatel, softened
1 cup grated sharp Cheddar cheese
4 teaspoons Snap liqueur
1 teaspoon curry powder
1/2 teaspoon salt
1 8-ounce jar mango chutney
Beat first 5 ingredients together. Pat out into a 1/2-inch thick round on a pretty plate. Chill. Pour entire jar of chutney over cheese mixture. Serve with saltine crackers.
